I love fall and I especially love it because of all of the yummy things you bake at this time of year! My favorite though, is anything pumpkin. I totally think of my mom when I think of pumpkin. My mom always made pumpkin chocolate chip cookies and they are the BEST ever. She also made a pumpkin roll that she would sometimes give neighbors for the holidays, and she always made pumpkin pie for Thanksgiving dinner.
So, I’m going to share my mom’s Pumpkin Chocolate Chip Cookie recipe with you (cookies pictured above) along with some other YUMMY pumpkin desserts I found.
Mom’s Pumpkin Chocolate Chip Cookies
1 1/2 cups sugar
1/2 cup shortening
1 egg
1 cup pumpkin
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
1 package chocolate chips
1/2 cup chopped walnuts (if desired)
Cream sugar and shortening together. Add egg and mix. Add pumpkin and mix. Add dry ingredients. Add chocolate chips & nuts.
Bake at 375 for 10 minutes.
Very simple, but they are seriously the best and they’re even better the second day after being in a container overnight…they’re more chewy and delicious! Give them a try, you won’t be disappointed!
