Can you believe Thanksgiving is in 3 days?? That’s just crazy! Luckily I’m not responsible for preparing all of Thanksgiving dinner, but I am in charge of dessert! My husband’s family aren’t all big Pumpkin Pie eaters but I’m a big pumpkin lover so I always bring something pumpkin-y for dessert along with something to please the others like a fruit pie or something with chocolate in it.
This year I decided I’ll be making a Pumpkin Cheesecake Parfait. This dessert can obviously be used any time during the fall/winter months, not just for Thanksgiving. It’s a very rich and creamy dessert so for a little twist and to balance out the sweetness, I used healthy Post Grape Nuts cereal for my topping, which gives it a nice nutty taste. INSIDER TIP: Post cereals are on sale at Walgreens this week for $1.99 a box – such a great deal!
And depending on where you’ll be serving this dessert, you can either make it in parfait cups or small mason jars which are excellent for transporting.
24 Biscoff Cookies, crushed
2 cups pumpkin puree
2 blocks softened cream cheese
1 cup sugar
2 teaspoons vanilla
1 Tablespoon pumpkin pie spice
2 tubs (12 oz) whipped topping, thawed
1/4 cup Post Grape Nuts cereal
This recipe will make 6-8 parfait cups or 8-10 small mason jar servings.
1. Place Biscoff cookies in a plastic bag and crush to form small pieces. Place crumbs in the bottom of each of your serving dishes.
2. In a large mixing bowl, beat cream cheese until smooth. Add pumpkin, sugar, vanilla and pumpkin pie spice and beat until well combined and creamy.
3. Using a spatula, fold in 1 tub of whipped topping until completely combined.
4. Layer pumpkin mixture over cookies using a spoon or piping bag.
5. Layer whipped topping over pumpkin layer and repeat pumpkin and whipped topping layers. Place in refrigerator until ready to serve.
6. Garnish with a sprinkle of Grape Nuts cereal.
If you will be transporting your parfait in mason jars, you can add a cupcake liner to the lids of your jars. Make them even cuter by adding a simple Happy Thanksgiving printable tag tied with twine. Your guests will be very impressed!
I printed my tags on brown kraft cardstock, but you can use whatever color you wish.
